Banana Pudding Ice Cream Cake
Ingredients:
Cake Layers:
¾ cup sugar
6 tbsp sour cream
1 tsp vanilla extract
3 large egg whites
1¼ cups all-purpose flour
2 tsp baking powder
¼ tsp salt
6 tbsp milk
2 tbsp water
Ice Cream:
¾ cup milk
3.4 oz banana cream pudding mix
8 oz cream cheese, softened
½ cup sugar
1½ cups heavy cream
2 large bananas, chopped
18 vanilla wafers, crushed
Whipped Cream Frosting:
2¼ cups heavy cream, cold
1 cup powdered sugar
1½ tsp vanilla extract
Yellow food coloring (optional)
Banana chips and crushed vanilla wafers for garnish
Directions:
Prepare Cake: Cream butter and sugar, add sour cream and vanilla, then egg whites. Mix dry ingredients separately and combine with wet. Bake at 350°F until done.
Make Ice Cream: Blend milk with pudding mix, then mix with cream cheese and sugar. Fold in whipped cream and add bananas and wafers.
Assemble: Layer cake and ice cream in a springform pan, freeze until firm.
Frost: Whip cream with sugar and vanilla, frost the cake, and adorn with wafers and banana chips.
