Mediterranean Feta Dip
Ingredients:
• 6 oz crumbled feta cheese (approx. 1.5 cups)
• 2 cups chopped tomato
• 1 cup chopped English cucumber
• 3-4 tablespoons quality olive oil or avocado oil
• 1 tablespoon lemon juice
• 1/2 teaspoon dried basil
• 1/4 teaspoon garlic powder
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1/8 teaspoon dried dill
• 1/8 teaspoon dried oregano leaves
Directions:
1. Prepare the vegetables: Start by chopping the tomatoes, English cucumber, and green onion. Set them aside in a large mixing bowl.
2. Add the feta: Add the crumbled feta cheese to the bowl with the chopped vegetables.
3. Mix the dressing: In a small bowl, whisk together the olive oil (or avocado oil), lemon juice, dried basil, garlic powder, salt, black pepper, dried dill, and dried oregano until well combined.
4. Combine everything: Pour the dressing over the feta and vegetable mixture. Gently toss until everything is evenly coated with the dressing.
5. Serve: Transfer the dip to a serving dish. Serve immediately with pita chips, crackers, or fresh veggies, or cover and refrigerate for up to 1 day. Enjoy
