Ingredients:
For the Crust:
- 1/4 cup granulated sugar 

- 1/3 cup unsalted butter, melted 

For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened 

- 1 cup granulated sugar 

- 1 cup sour cream 

- 3 large eggs 

- 1 teaspoon vanilla extract 

- 1/2 cup mint chocolate chips 

- 1/2 cup chopped mint chocolate 

For the Fudge Layer:
- 1 cup heavy cream 

- 1 cup semi-sweet chocolate chips 

- 1/2 teaspoon vanilla extract 

Directions:
1. Preheat oven to 325°F (165°C). Grease a 9-inch springform pan.
2. In a medium bowl, mix chocolate cookie crumbs, granulated sugar, and melted butter. Press the mixture firmly into the bottom of the prepared pan.
3. In a large bowl, beat cream cheese and granulated sugar until smooth. Add sour cream, then eggs one at a time, beating well after each addition. Stir in vanilla extract, mint chocolate chips, and chopped mint chocolate until well combined.
