Brownie Cupcakes
Ingredients:
2 boxes brownie mix
Ingredients called for on the box (typically water, oil, and eggs)
1 extra egg
Instructions:
Preheat your oven to 350°F (175°C).
In a mixing bowl, prepare the brownie mix according to the package instructions. Add one extra egg to make them chewier.
Generously spray a 24-cup muffin pan with nonstick cooking spray.
Pour the brownie batter evenly into each muffin cup, filling each about ⅔ full.
Bake for 20 minutes, or until the tops are set and a toothpick inserted into the center comes out with a few moist crumbs.
Allow brownies to cool in the pan for 5 minutes, then carefully slide a butter knife around the edges to release each brownie.
Transfer the brownies to a wire rack to cool completely or enjoy them warm.
Enjoy your individual brownie cups! Crispy on the outside, chewy on the inside, and no more corner piece battles!
